Palm Springs Fruit Salad

  1. Remove peel and pith from oranges. Slice oranges into 1/4-inch thick rounds. 

  2. Quarter and peel pineapple. Slice into 1/2-inch thick slices. 

  3. Arrange oranges, kiwi, and pineapple on 4 salad plates. Meanwhile, tear the chicken into strips. 

  4. To make the dressing, combine yogurt, honey, orange peels, ginger, salt, cayenne pepper, and mint. Toss with dates and Orange Mint Yogurt Dressing. 

  5. Divide the mixture into four portions and arrange evenly on each serving plate. Garnish with mint sprigs.
