Slice dates lengthwise on one side, taking care not to slice all the way through. Using fingers, gently open dates so that the cavity is accessible. Set aside.
In a medium bowl, add ricotta, confectioner’s sugar, vanilla, zest, and salt. Use a hand mixer on medium speed to beat until mixture is smooth, creamy, and no longer grainy-looking. Fold in mini chocolate chips or shavings.
Transfer ricotta mixture to a piping bag fitted with a large round tip (if opening is too small the chocolate pieces will get stuck) and pipe mixture to fill date cavities (or use a small spoon to spoon mixture into cavities). Sprinkle additional chocolate and orange zest on top. Optional: place a few waffle cone pieces in each “cannoli.”
Place dates on a serving platter. Enjoy!
